He should be ashamed. Threw the whole thing in the bin. This was wonderful dough. I halved it and used 1 cup white and 1 cup pastw flour. Scott Phillips. Yield: Yields 1 lb. Ingredients 18 oz. Nutritional Sample Size per 4 oz. Preparation Dump the flour in a pile on a work surface. Make a deep, wide well in the center and pour in the eggs, olive oil, and salt.
Little by little, mix in what are megabats sometimes called from the sides until the dough starts to move as a unit and is too stiff to mix with a fork. Continue mixing by hand, incorporating more flour to stiffen the dough. Discard the bits and keep the cup or two of sifted flour on the work surface to use during kneading if necessary. A deep, wide well of flour makes a tidy mixing bowl. Wash and dry your hands.
Poke it and it should spring right back; press your finger into the center and it should feel just a bit tacky. When the dough is sufficiently kneaded, a finger dent will bounce back. Wrap the dough loosely in plastic and refrigerate for at least 1 hour, or up to 8 hours. Recipe Notes Edit Delete. Save to Recipe Box.

I have a freezer full of ground beef right now so I am trying all the recipes. I really love Italian pasta dishes so I have been wanting to try some homemade raviolis. In my opinion, some of the best dinners start with fresh beef from your local farmer. Buying beef in bulk to fill your freezer for the first time can be intimidating.
They are afraid they will get more beef then they will be able to eat. My goal is to source you with so many different and easy to make beef recipes so that you are excited to source your beef from your local farmer.
You will have endless recipe opportunities, especially with all the farm fresh ground beef you will be getting. It really just depends on if you decide to make your own dough. I love making anything sourdough so the homemade dough is one of my favorite parts. I actually really enjoy the process in making these raviolis.
It can get a little messy but it yields delicious results. The dough making is my favorite part of this whole recipe.
My sister has had a sourdough starter going for over ten years now. I got some of her active starter a few months ago and I have been using it for baking nearly everyday! It is just so fun. Use a stand mixer with a dough hook attachment to incorporate all the ingredients and let knead on low for about 20 minutes.
Then roll the dough into a ball. Leave the dough ball in the bowl and cover it with plastic wrap. Let it rest for at least a half hour. If you want to get the full benefits of long fermented sourdough, then you need to let the dough rest overnight.
When you are ready to make your raviolis roll the dough out as thinly as possible. A pasta maker would be of great use, if you have one! Use a pizza cutter to cut the dough into thick slices so that you can stuff them with the ground beef mixture. Be sure to leave plenty of space on the edges so that you can cover all the beef in between the dough.
Cover the ground beef with another layer of dough and use your pizza cutter to cut them into individual squares. Then, use a fork around the out side of the ravioli square and press it firmly to seal up the dough squares. Instead of using a sourdough starter to make dough for your raviolis you could use this simple flour mix to yield the same results. Use a stand mixer with a dough hook to knead the dough until it comes together. Let the dough rest for about thirty minutes before rolling it out.
Roll as thinly as possible and then use a pizza cutter to cut into thick slices. I wanted all the Italian flavors for this one. I started by browning the beef with onions and garlic.
Then I added my favorite Italian blend of seasoning. The seasoning that I use has basil, rosemary, thyme, parsley, marjoram, lavender, and tarragon. After the beef is browned and seasoned you will need to mix in a can of tomato sauce. Then, mix in one tub of ricotta cheese. Your email address will not be published. These homemade raviolis are very fun to make and you'll love eating them too.
